Burrito Bowl Recipe

So I've been rambling on an on for a couple of weeks now about this diet and the burrito bowls that I eat pretty much every meal.

I have had several people message me and ask me for details so I figured I'd give you guys one of my go to's.


3 Medium Chicken Breasts

3 large eggs

1 can of black beans

1/2 cup of shredded cheese

1/2 of large onion

1/2 bell pepper

1/2 cup chopped spinach (fresh or frozen)

1/2 cup of chopped lettuce


2 Tbls olive oil

Various spices to taste:

chilli powder

onion powder

garlic salt


cayenne pepper

Louisiana hot sauce

sriracha sauce



Cooking instructions:

chop the chicken breasts into small bite size cubes

dice the vegetables

Add 2 tbls oil to a hot skillet or wok and then add in the onions garlic salt, salt, pepper, and sauté until transparent.

Add the chicken breasts in and stir fry adding in the additional spices until the chicken is almost cooked.

Once the chicken is starting to brown add in the other diced vegetables let the vegetables begin to soften then crack the three eggs and mix in until they are cooked.

Add black beans and mix well.

After the beans have had a chance to simmer a little bit add in cheese and Louisiana hot sauce.

After the cheese is melted remove from heat.

In the server dish or meal prep tray add a layer of lettuce, tomato, and any other vegetables you want, then simply add the cooked contents over the top of the lettuce and drizzle sriracha sauce over the top.

That's it. I usually do this every night and it will typically make two meals so I eat one and prep one to take to work the next day.

It's easy, it's surprisingly delicious and has everything you need for a slow carb meal.

** side note**:

Officially the cheese is not apart of the slow carb diet, however I have found that it doesn't cause any adverse effects to me as I'm still able to lose weight and feel great but results may very based on individuals and different body types and chemistries.
